Korokke (Potato Croquette)

My love for potatoes is like no other. Fried, boiled, scalloped, baked...give me all of it. Whenever I see potato on a menu, I'm like yup, we're definitely going to order that, no further questions.

Anyways, these little potato croquettes are to die for, and extremely quick to make. So if you ever need a quick dish to whip up, these are a good choice.



Korokke

Yield: 8 pieces


Ingredients

Russet potato 342g (roughly 1 large potato)

Ground beef 140g

Garlic, minced 2 cloves

Onion, diced 70g

Carrot, diced 55g

Olive oil 3g

Salt, to taste

Black pepper, to taste

Canola oil, for frying


Batter

Egg 50g

All purpose flour 40g

Water 32g

Mayonnaise 22g

Panko bread crumbs


Directions

1. Peel potato and dice into large pieces. Boil a pot of water and place potato pieces in. Cook until they are soft and drain the water. Mash the potato and set aside.


2. In a frying pan, heat up olive oil and add garlic to cook. Next, add in onion and cook until slightly translucent, about 5 minutes.

3. Add carrot and continue to cook for another 3 minutes.

4. Add ground beef and cook until the beef is completely cooked. Season with salt and pepper.

5. Add the cooked ingredients into the mashed potato and mix. Set aside and make the coating batter.


6. Making the batter: combine the egg, all purpose flour, water and mayonnaise. Whisk until there are no lumps.

7. Evenly divide the mashed potato into 8 pieces. Shape them into round balls, and slightly flatten.


8. Heat up a pot of oil to 350F. Once the oil is ready, evenly coat the croquette in the batter and dip into panko bread crumbs. When the whole piece is covered, place into the hot oil and cook until golden brown. Do not overcrowd the pot and watch the cooking of each side carefully.




9. Place onto a piece of paper towel to absorb excess oil.


These are also great to prepare ahead of time. I decided to fry them all at once, and to eat them another day, I would reheat in the oven for about 10 minutes at 325F.

*optional* You can dip into sauces like mayonnaise, sweet and chilli sauce, ketchup, etc...
