These cookies are extremely easy to make, and also very enjoyable to eat during tea time. Flavours can be very versatile as well so I decided to make three different flavours, plain, matcha, and black sesame.
Plain is definitely everybody's favourite, but since I had a couple of extra ingredients sitting around, I thought I'd try it out with this cookie.

Langue Du Chat Rolls
Yield: 12 cookies
Ingredients
All purpose flour 35g
Ground almonds 30g
Icing sugar 75g
Egg whites 70g
Butter, melted 50g
Vanilla 3g
Matcha
All purpose flour 30g
Matcha powder 5g
Ground almonds 30g
Icing sugar 75g
Egg whites 75g
Butter, melted 55g
Black Sesame
All purpose flour 30g
Black sesame powder 15g
Ground almonds 25g
Icing sugar 75g
Egg whites 70g
Butter, melted 50g
Directions
1. Preheat oven to 180C/350F.
2. Place all the dry ingredients, flour, ground almonds, icing sugar, and flavourings (matcha powder or black sesame) into a bowl and whisk to combine.

3. Create a small well in the center of the bowl, and add in egg whites and melted butter.
4. Whisk to combine, until there are no lumps.
5. Pipe 15g for each cookie onto a tray. I recommend only doing 2-3 at a time.

6. Using the back of a spoon, evenly spread into a large thin circle.

7. Bake for 5-6 minutes, or until edges begin to turn golden brown.

8. As soon as they come out of the oven, tightly roll them up. To prevent burning your fingers, use a chopstick to roll and tighten at the end.
9. Cool down completely before eating, or cookie will not be crispy.
