Old-Fashioned Sour Cream Donuts

Here in Canada, we have a fast food chain called Tim Hortons, and they specialize in coffee, muffins, cookies, and most importantly, donuts. My favourite go-to is the old fashioned sour cream glazed donut. Hands down, THE best one, in my opinion. It's a dense, but soft donut, and thickly glazed in a simple icing. It's delicious and 100% satisfies my massive sweet tooth.
I decided to just make the "donut holes" because I like bite-sized things, and makes me feel less guilty when eating them lol.

Old-Fashioned Sour Cream Donuts
Yield: 20 donut holes (OR 6 donuts+holes)
Ingredients
Cake flour 130g
Baking powder 4g
Salt 2.5g
Sugar 50g
Butter, room temperature 20g
Egg yolks 20g
Sour cream 57g
Canola oil, for frying
Glaze
Icing sugar 140g
Corn syrup 4g
Salt 1g
Vanilla 2g
Hot water 40g
Directions
1. Sift flour, baking powder, and salt. Set aside.
2. Beat butter and sugar until a sandy texture.

3. Add the yolks, and continue to mix until it is light and thick.

4. Add flour, in 3 additions, alternating with the sour cream. Make sure to end with the flour.
5. Chill the dough in the bowl for 1 hour.

6. On a lightly floured work surface, roll the dough out to 1/2 inch thick and cut rounds. Re-roll scraps to minimize waste.

7. Place canola oil into a pot and heat to 325F. Place 2-3 pieces into oil, and cook each side for about 2 minutes or until golden brown. Make sure not to overcrowd the pot, and watch each piece carefully.

8. Drain excess oil by placing on top of a rack.
9. Making the glaze: mix everything together, whisk until there are no lumps.

10. Dip each donut in the glaze, and set aside on the rack to let the excess glaze drip off. Let the glaze set for 20 minutes, then enjoy!


The donuts are best consumed on the same day, but can be stored for a few days in an air-tight container.
