Pork Floss Meringue Kisses

We've been running low on butter and flour because I've been messing around in the kitchen quite a bit. So I wanted to whip up something for fun that also didn't require a lot of ingredients.

Meringues are typically made to be sweet little treats or even used to decorate a cake. I wanted to try something a little different and decided to try making a sweet and savoury-ish meringue.


Pork Floss Meringue Kisses

Yield: 30-40 kisses


Ingredients

Egg whites 100g

Sugar 90g

Icing sugar 80g

Pork floss 40g


Directions

1. Preheat oven to 100C/212F.

2. Sift icing sugar and set aside.

3. Place egg whites and sugar into a bowl and heat over a bain marie, making sure to continuously whisk. Once the egg whites are warm to the touch, begin whipping with an electric mixer.


4. Whip the egg whites until it reaches stiff peaks.


5. Lightly fold in the icing sugar in three parts.

6. Once all the icing sugar has been incorporated, fold the pork floss in.


7. Using a star tip, pipe little meringues onto a parchment lined tray. Do not worry about spacing them out too much, as they should not expand in the oven.


8. Bake for 90 minutes. Turn oven off and let them cool in the oven.


These meringue kisses can last for about a week in a sealed air tight container. And feel free to switch up the pork floss with chicken or fish floss, whatever you have on hand.
