Silver Needle Noodles

Not a lot of places use this noodle for stir-fry and now I know why. They take A LOT of time and patience to make, so I could see these noodles going for a real high price to purchase OR I could be completely wrong...who knows! At first, it took a while to get the hang of, but after coming to the realization that they don't exactly need to look or be perfect, the pressure was off.

These were so much fun to make, and I can tell you, the whole dish tasted extra delicious, knowing that we made each noodle from scratch.

It really is amazing how you only need 5 ingredients to make these noodles, so give it a try!


The recipe below makes an approximate 1-2 servings. If you want to make more, I recommend making and finishing one recipe, and starting again, to ensure that the dough doesn't dry up too much in the process.



Silver Needle Noodles

Yield: 1-2 servings


Ingredients

Hot water 125g

Wheat starch 113g

Tapioca starch 12g

Salt 2g

Vegetable oil 6.5g


Directions


1. Place the wheat starch, tapioca starch and salt into a bowl. Give it a little mix to ensure everything is combined.


2. Pour in the hot water and quickly mix until all the starch has been incorporated. Cover the bowl tightly with plastic wrap/lid and rest for 3 minutes.


3. Add in the vegetable oil and knead until a smooth dough forms. Keep a moist towel covering the bowl while working.


4. Grab a small piece of the dough and roll into a long piece. Using a knife or scraper, cut into evenly sized pieces and begin to roll into shape. Make sure the two ends are rolled into a point to make the signature needle shape. Keep them on a plate or tray.




5. Once the whole dough has been shaped into individual noodles, get a pot of water and bring to a boil.


6. Place noodles into boiling water, and cook until they become slightly transparent, approximately 6-7 minutes. Drain and stir fry however you like.


This noodle is generally stir-fried and relatively dry, but feel free to use it however you like it. Our family decided to stir fry it with char siu, carrots, red pepper, green onion, shiitake mushrooms, and egg.
